These pancakes were a wonderful way to start my Sunday :)
Ingredients:
2 cups ricotta cheese
2 eggs
1/2 cup almond flour (you can use coconut or regular flour too)
1/2 tsp baking soda
3 tbsp stevia (or sugar)
2 tbsp coconut oil
1/2 cup of raspberries mashed
Instructions:
1. In a large bowl mix together ricotta cheese and eggs
2. Add flour and baking soda and mix well
3. Add stevia, coconut oil and raspberries and mix it all up. The mixture should not be runny
4. Heat a large skillet (spray it with pam or use some oil)
5. Scoop about 1 tbsp of batter on the skillet for each pancake, turn heat to medium (4/10) and cover.
6. Flip pancakes after about 1 and 1/2 minutes
7. Enjoy with fruit of choice :)
